Why do Enagic machines have alkaline and acidic water, and how is it produced?

Even though alkalinity has no therapeutic effects on the body, there are many advantages to having an ionizer that produces alkaline and acidic water, especially if you have sodium hypochlorite in the mix.

Strong Acidic Water (pH 2.5)

Strong acidic water with sodium hypochlorite results in a substance called Hypochlorous acid (HOCl), which is effective in killing 99.99% of germs and bacteria, including Staphylococcus, E. coli, and Salmonella, MRSA infections and diabetic ulcers, just to name a few. The Electrolysis Process

Alkalinity and acidity in the water are simply byproducts of the electrolysis process.

When water goes through the electrolysis process, some of the water molecules get reshuffled, so much so that hydrogen and hydroxyl ions (OH-; which is what makes the water alkaline) go through the cathode where we drink the water from, and oxygen and hydrogen cations (H+; which is what makes the water acidic) go through the anode.

Because Kangen Water®, especially the K8 (and probably the SD 501 as well), has a very strong charge, you may end up having tiny amounts of oxygen in the water you’re drinking, which can be extra beneficial for you.
